Fine grain Couscous is a very small, tiny pellet-shaped pasta made from semolina wheat, is Moroccan national dish and a staple food throughout the North African cuisine.
To prepare Couscous (Soaking Process):
Put 1 1/4 cups water, 1 tbsp olive oil and salt to taste,bring it to a boil over high heat. Stir in 1 cup couscous, cover, and remove from the heat. Let it rest, covered, until the couscous absorbs the water, 5-10 minutes. Fluff it with a fork and serve.
1 cup couscous will yield 3 cup cooked couscous
