Wheat Couscous is a healthy dietary staple, Use in place of rice, or as a base for so many tajin dishes---especially roasted meats, poultry and fish, or chilled salads.
To prepare Couscous:
Put 1 1/4 cups water, 1 tbsp butter or olive oil and salt to taste, bring it to a boil over high heat. Stir in 1 cup couscous, cover, and remove from the heat. Let it rest, covered, until the couscous absorbs the water, 5 minutes. Fluff with fork and serve.
1 cup whole wheat couscous will yield 3 cup cooked couscous
