Fenugreek Leaves (Trigonella foenum-graecum) is leaves of an annual plant. In Indian cuisine, dried Fenugreek Leaves is known as Kasuri Methi, has more intense flavor than fresh Fenugreek leaves, used mostly for flavoring various Indian dishes breads. In Persian cuisine, fenugreek leaves are called Shanbalile. They are the key ingredient and said to be used in the Iranian national dishes.
Taste is similar to a combination of celery and fennel with a slightly bitter bite, but when added to the recipe, it stimulates the taste buds.
