(Mangifera indica L.)
Amchur powder is ground sun-dried slices of raw mango. It is acidic & tart, and has slightly spicy flavor of unripe mango. Amchur is used as a souring agent. It is also used in spice blends. It gives food a tangy, tart, slightly sour taste with tropical fruity aroma to all Indian dishes. Usually added in the food a couple of minutes before take it off the heat. Can be used instead of Lemon juice.
One teaspoon of Amchur powder for 3 tablespoons of lemon juice.
It is an excellent source of Beta-carotene, high Vitamin A and Vitamin C, antioxidants, minerals. It combats acidity and improves digestion.
