Cassia buds, known in India as ‘Kala Nagkesar’, are the sun dried unopened cassia (cinnamon) flower bud. Cassia buds smell and taste like peppery, sweet, earthy, floral cinnamon flavor.
Cassia buds can be used as a spice, in pickling recipes, stewed fruits, in tea blends, in spicy marinades for meats in baking and slow cooking.
