The red jalapeÃ±os are smoked in a closed smoke chamber for several days ( until most of the moisture is removed), where heat of the jalapeÃ±os combines with the taste of smoke. (It takes about 10 pounds of jalapenos to make a pound of chipotle.) Chipotle Moritas are smoked for less time, which leaves them softer and retains their slightly fruity and sweet flavor, a subtle, deep rounded heat witha distinctive smoky flavor.
