The peel with its attached white pith of Citron (like a huge yellow-green, lumpy lemon like semitropical citrus fruit with extremely thick, lemon-perfumed peel) are boiled to remove the bitterness, and then cooked in a mixture of sugar and water to make glazed/ candied citron. Citron fruits are to be cut into Halves to make the candying process more effective. This glazed Citron has a distinct taste because it combines the bitter taste of the fruit rind with the sweetness of the sugar for a truly mouthwatering experience.
