This is a Tomato flavored couscous, made out of tomato and duram wheat semolina flour. Tomato gives the couscous its color and added flavor.
Serve Couscous with long-braised Moroccan stews, broiled vegetables. Cook and chill to use as a base for salads.
Bring 1-1/4 cups of water to rolling boil, add dash of salt and 1 tsp oil, remove from heat. Add 1 cup couscous, stir and let sit for 5 minutes. Add some butter, fluff with a fork and serve hot.
1 cup dry couscous yields 3 cups cooked couscous
