To hydrate: Use 1 part dry shallots and 4 parts water. Simmer 5-10 minutes or allow them to soften up. Add to eggs and omelets, baked or sauteed fish and chicken. Or add dried shallots to soups, stews, sauces, casseroles and other foods with sufficient liquid content.
