Eye of the goat bean has this skin, a creamy texture and has a great natural flavor. A favorite bean for classic bean pot.

Use in pot beans, soups, stews, salads, re fried beans, mixed vegetables and dips.

Basic Preparation: Carefully sort and rinse thoroughly. Soak overnight in cold water. Drain and rinse. Place in a large pot, covered by 2 inches with cold water. Bring to a boil, then reduce heat and simmer 60 minutes or until tender.
