Description
Fava (Broad) Bean are a flat, oval, large greenish brown skin, staple of the Eastern Mediterranean diet. When the outer skin peeled, and have a creamy pale yellow color bean.
When cooked has bold, earthy flavor, creamy, buttery taste and granular texture. Fava beans are good in soups, dips, salads, pastas and stews.
Basic preparation: Wash, rise & soak overnight. Peel the outer skins (should slide off). Add 4 Cups of water/Cup of Bean, bring to boil. Reduce heat and simmer covered for 60-75 minutes or until tender (add more water as needed). Whisk lightly, remove the floating foam. Flavor with butter or oil, salt to taste and any seasoning if desired. Cook uncovered over low heat until desired consistency.
Yield: 3 cups of cooked beans / Cup of dry beans
