It can be used as a healthy, gluten free substitute for any grain as a hot cereal or for side dishes or stews.
Cooking Instruction: Toast 1 cup Fonio in a dry pan, stirring until lightly browned. Stir in 2 cups of water very slowly (do not add water all at once, should take 4-5 minutes) and stirring constantly to avoid clumping. Remove from heat, cover and let sit for 10 minutes. Fluff with fork before serving
