Galangal is native to Java, also known ‘Laos’, and refer as ‘Siamese or Thai Ginger’.
Dried galangal has a pronounced musky, strong, aromatic, punchy flavor that can be overwhelming. Use dried sliced galangal in soups, broths and stews (removed before serving) and for curry pastes, soak in hot water to soften, pulverize with a mortar and pestle.
Galangal is a digestive stimulant and also helps to treat the hiccups, settle stomach upsets, ease nausea and curb flatulence.
