Cooking Instruction: Wash, soak 2 cups beans in water 3-4 days or until they have sprouted. Drain and add to 5 cups of water, bring to boil. Simmer for 60-90 min or until soft and tender (add more water as needed). Whisk lightly, remove the floating foam. Flavor with butter or oil, salt to taste & spices (cumin seeds, black mustard seeds, fennel seeds and ajwain seeds). Cook uncovered over low heat until desired consistency. Serve warm.
1 cup dry yields 2 ½ cup cooked dal.
