It is derived sugar alcohol ( polyol) that is 90% sweet as sucrose ( table sugar), and is made by hydrogenaration of maltose obtained from starch. Can be replaced for table sugar fow it's lower calorie content. It does not promote tooth decay.Has a high glycemic index and so it has lesser effect on blood sugar.Itdoes not caramelize like sucrose. It is also not hygroscopic and performs well with chocolate and low-moisture foods.
