Masa Harina, which has its distinctive taste, is a very finely ground corn flour made from field/dent corn (Golden Hominy) that has been soaked in slaked lime/lime water then dried before grinding. It has a soft texture and reconstitutes very easily with many other liquids – from water to eggs to oil – water is generally the most common, ideal for making easy-to-shape dough.
