Simple recipe for Paella dish with chicken, seafood & vegetables
In a large Paella Pan heat 2tbsp oil, add 2tbsp Paella Seasoning, stir, add 2lbs skinless & boneless chicken cubes, mix., Add 1 ½cup Spanish ‘Bomba or ‘Calaspara rice, 1 cup diced red & green bell pepper, 1 cup diced onion, mix. Add 3 cup chicken stock and a pinch of Spanish saffron threads, stir, add salt if needed. Bring to boil, lower the heat, simmer until rice is tender (10-15 minutes). Push in some sautéed shrimp, squid rings and steamed mussels in the rice. Scatter ½ cup green peas over the rice, cover and cook for 5 minutes or allow all to get heat through. Garnish with chopped parsley and lemon wedge and serve warm.
