Recipe to cook chicken tagine:
Heat a tagine (earthenware baking dish) on a low heat, add 2-3tbsp olive oil, add 2 sliced onion, 2-3 minced garlic cloves, stir-fry until onions are soft, sprinkle over 2tbsp tagine seasoning, ¼ saffron water, juice of ½ lemon, 2 small sliced preserved lemon, 2tbsp chopped coriander and salt to taste. Toss it all together well. Put 6-8 chicken thigh and spread 1 cup green olives over the mix. Pour 1 cup chicken broth, cover with the lid, simmer until chicken is cooked and tender (45-50 minutes.
