Often used as a stabilizer. It has very low bulk density, used primarily to increase the volume of dry mixes and frozen foods.
Can stabilize high-fat ingredients, dissolves completely when in contact with any aqueous medium, oil or fat, and can be transformed into with enough fat into a melt-in-your-mouth powder.
To Make Powder from Oil: Use N-Zorbit in an amount equal to 80-100% of the weight of the oil.
To Make Oil Paste: Use 30-40% of the weight of the oil.
For Thickening Sauces & Bulking Gels: Use 5-20%.
