Description
Tongue of Fire is the best flavored horticultural bean, have deep amber and burgundy with light mocha-colored markings, resemble fire flames. It has a mild texture and fresh nutty flavor. When cooked, it absorbs the flavor of romantic herbs, savory spices and adds extra dimension to it.
Use in side dishes, stews, casseroles, soups, cassoulet, or cold bean salads.
Basic Preparation: Wash, rinse & soak overnight. Add 4 cups of water/cup of bean, bring to boil. Reduce heat and simmer covered for 45-60 minutes or until tender (add more water as needed). Whisk lightly, remove the floating foam, flavor with butter or oil, salt to taste and any seasoning if desired. Cook uncovered over low heat until desired consistency.
Yield: 3 cups of cooked beans / Cup of dry beans
