Rinse and soak overnight & drain. Add 3 cups of water/ cup of peas, bring to boil. Lower the heat, cook covered 40-50 minutes, or until tender, soft & mushy (add more water as needed). Cook the peas little more uncovered over low heat until desired consistency and remove the floating foam. Add salt to taste and any seasonings as desired. Serve or add to prepare your favorite dish.
